The Perfect East Grinstead Wedding

We were fortunate to be asked to provide Catering to Emma and James for their East Grinstead Wedding in December 2017.

Our brief was to provide, welcome drinks with nibbles, canapés, followed by a 3-course winter feast, with evening food (and the bar!) all for 220 people, followed by the after party the next day for 140 people! All in a marquee in their parents back garden with no kitchen facilities to speak off!

The first step for the East Grinstead Wedding was to sit down with Emma, James and Emma’s parents to discuss their vision for the wedding day followed by their likes and dislikes when it comes to food. Emma, who works in the food industry had specific ideas about the menu, even down to the best suppliers to use!

Providing us with such a clear vision on what they wanted allowed us to come up with a menu that went down a storm on the day!

Champagne and warm mince pies when guest arrive

Canapes

Hand prepped antipasti canapes inc Prosciutto with roasted peppers, Burrata with black pepper crisps, bruschetta and Tapenade crostini’s (1000 in total)

Entrée

Christmas Wreath Brioche with rosemary baked camembert  

Main Course

Seasonal Roasted Vegetables with Turkey Pie and buttery Mash and a Turkey gravy

Dessert

Black Forrest Yule logs with kirsch and cream

Evening Food

Sweet potato fries with Charlie Brigham Mac ’n’ Cheese

After Party

Roasted turkey, glazed ham, butcher’s sausages with freshly baked rolls and fries.

The are obvious logistical issues when trying to feed 220 people a delicious hot meal in a marquee in winter. Our solution involved using our years of experience as well as our unique mobile kitchen as well as food trucks with holding ovens.

A prep area was formed in the double garage for the canapes with our team of chef’s and staff producing a steady stream of freshly made canapes for the waiting staff to serve to the hungry guests.

Our Brioche wreaths were made by the master baker the aptly named Mr Bunn (David to his friends) from Fellows the Bakery in Ardingly and warmed in our holding ovens as the camembert was baking. These were then placed into warming cupboards closer to the seating area (our Kitchen was 75 meters away at the front of the house).

A full-service area was set up to ensure that the is food plated, under the hot lamps and then in front of a guest (8 at a time) within 45 seconds. Every guest was served the starters within 20 minutes and the mains within 30 min, no mean feat!

The dessert service was literally a piece of cake!

We then created a street food pop up stall in the bar area for the evening food.
